YUM part 1: Quick Bread!

Anybody who knows me knows I LOVE to cook and bake. So I think I might start sharing some of my favorite recipes here. The things I make are pretty simple and homey and usually kind of healthy!

This recipe is for a really yummy quick bread. You can use pureed pumpkin or mashed bananas. I have not tried other things yet but I reckon it would be good with other fruit and veg too! Maybe yams? The best part is that this quick bread is really good for you, with only like 120 kcal in a serving and almost NO fat...and it doesn't even taste healthy! (Sam even liked it which is saying something). It's great for breakfast or a snack or dessert.



3/4 cup wholemeal flour
3/4 cup white flour
1/4 cup soft brown sugar
1/4 cup white sugar
1 1/4 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1 egg
1 cup mashed bananas (about 3 bananas) OR pureed pumpkin OR whatever else
1/4 cup apple sauce or apple puree
1 tsp vanilla extract
1 tsp almond extract

1. Preheat oven to 350 F or 175 C. Oil and flour a loaf tin.
2. Mix all the flour, sugar, baking powder and soda, and cinnamon in a big bowl.
3. Put all the rest of the ingredients in the bowl and mix until JUST combined.
4. Pour it in the loaf tin. You can put stuff on top like sliced bananas or oats if you want!
5. Bake for about 50-55 minutes. Check if it's ready by sticking a knife into the middle, and if it comes out with no raw batter on it it's ready!
6. Let it cool a bit on a wire rack before taking it out the tin, and ENJOY YUMMY QUICK BREAD GUILT-FREE!

Notes: I like to use both white and wholemeal flour because it tastes good and is better for you, but you can just use white if you want.
In UK you can usually find canned pumpkin puree in Whole Foods, otherwise it's easy to make yourself by baking pumpkin slices until really mushy on the inside and taking the skin off and mashing.
In London it seems difficult to find apple puree in the store so I just boiled some cooking apples and drained and mashed them. Good to keep for a snack too!
If you don't feel like buying almond extract, you can substitute with another tsp of vanilla.
You can put nuts or raisins or chocolate chips in the batter if you want! Stir them in right before you pour into the tin.

I think it might be the wholemeal flour, but just a little bit of this stuff makes me really full! It's perfect for someone with a horrible sweet tooth like me. Wholemeal flour is good for you because it releases its energy slowly so it keeps you full and energised for longer. I really recommend trying it! It is more flavorful as white flour as well, and has a kind of a nice nutty flavor.

food & stuff

My uncle and his wife and 7 year old daughter came over for dinner the other night. I love my uncle so much and he is a total foodie so I really really wanted to impress him. I made an American dish from the South called jambalaya because I figured he never had it before, and they loved it (or so they said because they are super nice). I managed to dirty every dish kitchen though (major depressing clean-up the next day). Well the point is, my super adorable little cousin asked if she could peek in the kitchen at Sam cooking, and she tip-toed over there really quiet and came back and said, "WOW!!! I NEVER seen a boy cooking before!!!" Genuinely impressed. Which was like the cutest thing ever. Now that I think about it, I had a similar reaction first time he cooked for me. some things to make you happy

i am just starting to figure these things out, thought i'd share~

do the things that make you happy and fulfilled as much as you can. everyone has their thing. for me its doing creative things like taking pictures or writing a song, but it could be as simple as riding your bike or dancing around your house. it can be easy to feel too lazy to do these things, and instead do something passive like look at pictures on fb, but if you try to spend SOME time each day doing the things you love it boosts happiness by so much!

if you are feeling confused, everything you need to know is probably already in your head. just do the things you know you need to do.

however hard it is, don't compare yourself to other people. it useless thought and will just make you either sad or patronizing. instead, focus on being the most awesome version of YOURself you can be...you will like yourself more and others will too!

be nice to others, even if you are in a bad mood or feel annoyed. putting that small effort to be nice (you dont have to pretend to be happy!) will lift all the mood around you and will probably make you a little happier too.

do some exercise! i've only recently discovered this. exercise can be fun, so do something you enjoy like maybe playing tennis or doing yoga or dancing or running...whatever but really focus on it and do it until your heart rate goes up and you sweat a bit. this kind of focus kind of like meditating because you forget about all those every day things and makes you feel so good and replenished.

it is not worth it to starve yourself! there are so many better things to think about than what you are/aren't eating all the time. and other people are much too concerned about how THEY look to care how you do. and if they are not thinking about that they won't care what you look like either!

work hard on the things that matter, and do the things that you do well. then after you work hard, your down time (or party time) is so much more fun and rewarding because you can feel like you deserve it!

spend time by yourself. i used to have such issues with being alone, but now i find it to be such valuable time. just a little walk with headphones on, when your mind can wander or reflect, and somehow my life and direction can seem so much more clear. this also really helps if you are feeling very emotional/confused.

this one is pinched from my bff ten's blog: "I always thought it's better to look at how you view the world instead of how the world views you." she is really wise!

i'm not sure if these will apply to everyone, and i don't like having an authoritative tone, but these thoughts help me realize it's not the end of the world all the time. and i don't mean to be a cheeseball, but knowing how to make yourself happy is really valuable! because being happy IS important. i might add more happy things to my blog as i think of them, cos why not?

Leisure Mag: Juice-Purple :)

The old Platform magazine has relaunched as Leisure, introducing a whole new format where they produce content based on themes. Currently, they are doing a project called "The Spectrum: A Month of Chromophilia" where they post shoots, videos, and other little musings based on the colors of the rainbow. I shot a girl named Juice for Purple.

We ate Monster Munch which was fun. I also modeled for Blue, shot by Louie Jenkins.

OCTOBER! It's time!

It's October!! Which means it's time to start thinking about my favorite holiday....Halloween!!! Last year I was a pretty princess. When I was a young girl my parents always threw big Halloween partys so this month always fills me with excitement! I love the smell of rubber masks and synthetic things, spooky stuff everywhere, witches hats, colored lights, pumpkins... and walking around a bit too cold in the "OMG PERFECT" costume.

Unfortunately last Halloween was so boring that Sam ended up falling asleep in some random place at like 11 and I don't think we were even drunk. This may seem like the problem but it was so bad that if we WERE drunk we probably would have been more tired and gone home earlier.

This year will be better!! Me and Stefan are already thinking about joint costumes. And I think the trick is to start off with loads of Halloween candy and go from there, so the day is already a win :D
